Fig Preserves

Instructions

  1. Wash your figs.
  2. Remove stems and cut figs into quarters, halves, or leave whole, and place in a large pot with sugar and water.
  3. Turn the heat up to medium-high, bringing it down to medium-low after it starts to simmer.
  4. Let cook for 90-120 minutes, stirring occasionally. Use the cold plate test to check if it's ready.
  5. Add the lemon juice in the last five minutes of cooking.
  6. Move the preserves into sanitzed jars. If you are canning, it should last for about a year and a half. If you are not canning, store in the fridge and consume within two to three weeks.
