Fig Preserves
I'm from STATEN ISLAND, of course I grow my own figs.

Ingredients
- 1800g (~4 lbs) figs
- 600g (1/3 the weight of the figs) sugar
- 300g (1/2 the weight of the sugar) water
- juice from half a lemon
Instructions
- Wash your figs.
- Remove stems and cut figs into quarters, halves, or leave whole, and place in a large pot with sugar and water.
- Turn the heat up to medium-high, bringing it down to medium-low after it starts to simmer.
- Let cook for 90-120 minutes, stirring occasionally. Use the cold plate test to check if it's ready.
- Add the lemon juice in the last five minutes of cooking.
- Move the preserves into sanitzed jars. If you are canning, it should last for about a year and a half. If you are not canning, store in the fridge and consume within two to three weeks.
